Creamy Parmesan Italian Sausage Soup

  • 1 lb. Italian Sausage
  • 3 tsp Garlic ((crushed))
  • 1 Onion ((minced onion or onion powder will work))
  • Carrots ((chopped))
  • 1 Bell Pepper ((chopped))
  • 1/4 cup Flour
  • 1 can Tomato Paste
  • 4 cups Chicken Broth
  • 2 cups Water
  • 1 TBSP Italian Seasoning
  • 1 cup Heavy Cream
  • 1 pkg Tortellini ((family sized package))
  • 3 handfuls Spinach ((fresh))
  1. Brown Italian sausage with garlic over medium heat until cooked through.

  2. Stir in carrots and onions to to taste preference. Allow to cook for several minutes.

  3. Stir in flour to coat sausage and veggies.

  4. Add tomato paste. Stir until incorporated. Let cook for several minutes.

  5. Mix in Italian seasoning.

  6. Deglaze with chicken broth and water.

  7. Bring pot to a boil. Once boiling, stir in heavy cream.

  8. Lower heat, stir in tortellini and spinach. Cover pot and simmer on low for 5 minutes.

  9. Serve with freshly grated parmesan on top.
