Cucumber Greek Salad

It’s over 80º here in Nashville today so it’s officially time to bust out our favorite cucumber Greek salad.

Once the weather warms up, I start to whip out all of my favorite Greek recipes. Mediterranean food is just so fresh and crisp, it makes even the hottest days taste better.

I make so many different types of Greek salads in the summer that I can’t even remember which recipes are which, lol.

This cucumber Greek salad is always a big hit, so easy to make, and takes less than 10 minutes to throw together. I love keeping a big container of this salad prepped in my fridge so I can easily grab it throughout the week as a snack, side dish, or even lunch.

My favorite way to eat this cucumber Greek salad is topped with fresh avocado slices, but my hubby loves it topped with protein. It has such a fresh taste that it pairs fabulously with chicken, steak, or even salmon.

Before we hop into the recipe, let’s talk about a few items that are absolute MUST HAVES for my favorite recipes.

 

KITCHEN MUST HAVES FROM AMAZON

 

Lemon Squeezer: A good quality metal lemon press is a kitchen staple. I use my lemon squeezer for fresh kemon juice all summer long.

Non-Toxic Mini Pot: For some time now, I have been making the switch to non-toxic kitchen products. Our Place is one of my very favorite cooking brands because their quality is top notch. I have all of the Our Place pots and pans and reach for the on a daily basis. This mini pot is the perfect size for making rice, pasta, grain, oatmeal, veggies, and so much more.

Sizzle Olive Oil: This extra virgin olive oil is a MUST for all kitchens. The “Sizzle” oil is perfect to keep on hand for topping salads, pastas, veggies, and just about everything else. I love that it is a single source oil and 100% pure olive oil. It tastes so good.

Kalas Greek Iodized Sea Salt: As someone who has low iodine, I went on the hunt for a great quality sea salt with iodine and stumbled across this one from Kalas. I have now reordered it multiple times and no longer buy any other salt brands.

 

Cucumber Greek Salad

Ingredients

  • 1 cup Couscous cooked
  • 1 pkg Mozzarella Pearls
  • 3 Small Cucumbers diced
  • 1 Lemon squeezed
  • Olive Oil
  • Sea Salt
  • Garlic
  • Onion

Instructions

  • Cook couscous according to directions to make one cup.
  • Combine cooked couscous with diced cucumbers and mozzarella pearls. Mix well.
  • Squeeze 1/2 to 1 full lemon on top of mixture to taste. Drizzle with olive oil.
  • Stir in sea salt, garlic, and onion to taste.
  • Refrigerate until chilled. Top with avocado, chicken, steak, salmon, or any other favorite toppings. Sprinkle with crumbled feta cheese.

Notes

May use fresh garlic and onions, or powdered. Adjust quantities to taste.
