Cucumber Greek Salad
Ingredients

cup
Couscous
cooked
1
pkg
Mozzarella Pearls
3
Small Cucumbers
diced
1
Lemon
squeezed
Olive Oil
Sea Salt
Garlic
Onion
Instructions
Cook couscous according to directions to make one cup.
Combine cooked couscous with diced cucumbers and mozzarella pearls. Mix well.
Squeeze 1/2 to 1 full lemon on top of mixture to taste. Drizzle with olive oil.
Stir in sea salt, garlic, and onion to taste.
Refrigerate until chilled. Top with avocado, chicken, steak, salmon, or any other favorite toppings. Sprinkle with crumbled feta cheese.
Notes
May use fresh garlic and onions, or powdered. Adjust quantities to taste.
