Ahh, sweet potatoes. The veggie we love on Thanksgiving but get so sick of when we’re dieting.
Y’all. I can make a sweet potato casserole that’ll have even Paula Deen saying, “YUM!!” to. Let’s be honest though… That level of sugar and butter shouldn’t be acceptable in any persons everyday diet. LOL.
So, how do you make delicious sweet potatoes minus the sugar? I’m about to share the easiest and healthiest recipe that works as a side with just about any meal.
Preheat your oven to 400º. Wash your sweet potatoes REAL good. Scrub away all that dirt. Then, slice your potatoes in half lengthwise.
Line your baking sheet with parchment paper. Coat your potato halves in extra virgin olive oil and sprinkle with sea salt. Bake flesh side down for 25-30 minutes. They’re done then the flesh side is perfectly caramelized and crunchy. The inside is 100% cooked through. They’ll be so good with only the EVOO and sea salt that you won’t need to do anything else but chow down.
I’m promising you, these are the tastiest sugar-free sweet potatoes you’ll find. The perfect healthy side dish for your dinner tonight. 🙂
