Soup season is here. If you loved my loaded baked potato soup, then you have to make this easy crockpot frozen hash brown potato soup recipe.

Potato soup has been a staple in our family my whole life. When my mom was growing up, whenever she was sick, my Pawpaw would make her a pot of this creamy goodness.

It’s so easy to make and a definite crowd pleaser.

You you love a creamy, comforting bowl of soup, then this crockpot frozen hash brown potato soup is for you.



I chose to make this crockpot frozen hash brown potato soup in my slow cooker so I could set it and forget it. It really only takes a few simple ingredients set on low. There’s a good chance you have most, if not all of these ingredients on hand in your kitchen.

If you don’t have heavy whipping cream, don’t stress. You can easily substitute the heavy whipping cream for milk, half and half, or sour cream.

As for toppings, get as simple or as creative as your tastebuds want. Personally, I love to top our crockpot potato soup with freshly shredded cheddar cheese, and crumbled bacon bits. If you want more flavor, try adding sliced green onions, a dollop of sour cream, or even a little hot sauce for a kick of spiciness.

This recipe can easily be made into one pot potato soup, just adjust your cooking times.

As for leftovers, this easy potato soup warms up so well in the microwave. You can easily reheat in the crockpot as well. The frozen hash browns add to the creaminess, not turning soggy at all.


Crockpot Potato Soup

Equipment

  • 1 Crockpot

Ingredients

  • 2 bags frozen hash browns
  • 1 carton chicken broth
  • 1 can cream of chicken soup
  • 1 can water
  • salt & pepper
  • garlic powder
  • onion powder
  • 1 block cream cheese
  • heavy whipping cream

Instructions

  • In crockpot, combine hash browns, chicken broth, cream of chicken soup, and season to taste.
  • Use empty can and fill with water, add to crockpot.
  • Stir to combine.
  • Slow cook on low for four hours, until frozen hash browns are fully cooked and soup appears creamy.
  • Stir in cream cheese.
  • Add heavy whipping cream until desired consistency is achieved.
  • Season to taste. Top with shredded cheese, bacon crumbles, and any other toppings you choose.
