Last year, Women Living Well posted a recipe for Stuffed Pepper Soup in a crock pot, which you can find here. I knew I had to try this recipe out since my hubby is a major fan of stuffed peppers. This recipe is a serious winner in our house! I’ve changed a couple of ingredients in the recipe to make it a little bit healthier. I thought I’d share with you not only the link to the original recipe, but also my version of the recipe (which I cut in half.) You can’t even taste that it’s ground turkey and not beef because the soup is so flavorful.
Ingredients:
– 4 cups low sodium organic beef broth
– 1 lb. low fat ground turkey
– 14 oz. can tomato sauce
– 14 oz. can crushed tomatoes
– 1 cup uncooked brown rice
– 1 fresh green pepper diced
– 1 fresh red pepper diced
– 1/4 cup sugar
– 1/2 tsp. sea salt
– 1 tsp. fresh ground black pepper
– 1/2 tsp. (heaping) onion flakes
– 1/2 tsp. (heaping) garlic powder
Brown the ground turkey in 1 tbsp. of olive oil. Put all ingredients in crock pot and mix. Add in browned ground turkey and mix well. Cook on high for 3-4 hours (mine was done in 3 hours!). Season the soup to taste with additional sea salt and fresh ground black pepper if needed. I serve mine with a sprinkle of low fat mozzarella cheese.
