I’ve never been a huge coconut fan, but my man sure is! When I saw this coconut bread recipe on Pinterest, I had to give it a try. It was pretty simple to make.. Except I had to make a special trip to the grocery store for almond meal (I’ve never even heard of almond meal until this recipe!)
This bread has a very soft consistency. The taste reminds me of Greek or Italian cookies with it’s slight lemon taste. It’s really delicious and is the perfect treat to go along with your morning cup of coffee.
Ingredients:
– 1 1/4 stick of butter (10 oz.)
– 2 tbsp. fresh lemon zest
– 2 eggs (not pictured, whoops!)
– 3/4 cup of sugar
– 2 tbsp. baking powder
– 3 cups of all purpose flour
– 2/3 cup of almond meal
– 1 cup of shredded coconut (sweetened)
– 1 cup buttermilk
This recipe makes two loaves. Grease and flour your bread pans. Soften your butter. Combine your butter, lemon zest and sugar in a bowl. Mix until creamy and then add in eggs. Mix in flour and baking powder. Add in almond meal, coconut and buttermilk. I added in the dry ingredients gradually as the mixer had a hard time keeping up until the buttermilk was added.
Separate mixture into two pans. Bake at 320 degrees for an hour and a half until nicely browned. My first loaf was done at about an hour and fifteen minutes and second I baked the entire time.
