Creamy Parmesan Italian Sausage Soup with Tortellini

Ingredients

  • 1 lb Italian sausage
  • 3 tsp Garlic crushed
  • Onion powder
  • Carrots chopped or grated
  • 1/4 cup Flour
  • 1 can Tomato Paste
  • 4 cups Chicken broth
  • 2 cups Water
  • 1 Tbsp Italian seasoning
  • 1 cup Heavy whipping cream
  • 1 pkg Tortellini family sized
  • 3 handfuls Spinach

Instructions

  • Brown Italian sausage with garlic.
  • Mix in carrots and onion.
  • Add in flour to coat.
  • Stir in tomato paste and let cook for a few minutes until incorporated.
  • Add in Italian seasoning.
  • Deglaze with broth and water.
  • Bring to boil.
  • Add in heavy cream.
  • Lower heat and stir in tortellini.
  • Add spinach, cover, and simmer on low for five minutes.
