Mawmaw’s Chicken Soup Recipe

Whenever my fiancé starts getting sick, I know it’s time to make a batch of my Grandma’s chicken soup.. Because if anything can make you feel better, homemade chicken soup will do the trick. My grandma goes by Mawmaw and pretty much everyone calls her that. My whole life Mawmaw has made this dish and served it with hot fresh biscuits.. Talk about a comfort food! I always make this from memory, so today I did my best to measure everything out as best as possible so you can make the world’s best cold remedy in your own kitchen!
Ingredients:
– 1 lb. of chicken. We prefer dark meat, but you can use any pieces you like.
– 1 cup chopped carrots
– 1 box of pasta of your choice
– fresh ground black pepper (to taste)
– 1/2 tsp. garlic powder
– 4 tbsp. chicken base. Add more if needed.
– Cream of Chicken Soup
– 2 cups of chicken stock
– large soup pot filled about 1/2 way with water
– 1 tbsp. butter
Bring your water, carrots, chicken stock, black pepper, garlic powder, chicken base & butter to a boil. Add chicken (I remove the skins from the chicken before boiling.) Boil till chicken is fully cooked- I usually cook it for about 20-25 mins. Remove chicken for broth and cut off the bone into bite size pieces then add chicken pieces back to the broth. If your broth has cooked down, add a cup or two of hot water. Add in pasta and cook according to box directions. Once fully cooked, taste to see if additional chicken base, salt or pepper needs added. Don’t forget to serve with hot buttered biscuits!! Enjoy!

    Hey, Angela! Nice to meet you. I started reading your blog and very much it is pleasant to me)))))) Your recipe of chicken soup was pleasant to me but as I from Russia I would like to add a couple of words about chicken soup. We here in such soup add a few other macaroni, they much less and are thinner, are called vermicelli (if you certainly know that it) and broth turns out more gentle if to cook it only on a chicken breast)))))))

    yes, by the way, forgot to ask why you cut carrots such big pieces? it is so accepted to do according to this recipe or so you usually cut carrots. I always cut carrots small cubes when I stew it with other vegetables or I rub on a small grater for different soups

    Hi Ekaterina! You can definitely use any type of pasta you like, we just prefer pasta shells in my house 🙂 I cut the carrots to bite size pieces, but you can cut them any way you like, or not add them at all. I also sometimes like to add in pieces of celery. Thanks for reading!!
